Yipeees Operational Diagnostics, available
to restaurants, hotels and catering facilities, is a comprehensive
review of the establishment's personnel, procedures and operations.
Performed by Yipeees management team of experienced
food service professionals, it entails four distinct phases.
After initial contact by the owner of the business,
Yipeees diagnostic team makes several anonymous visits
to the facility. Their guise as typical guests
allows them to observe front-of-the-house procedures and practices.
Our teams anonymity is crucial at this point, so we
can be assured the staffs behavior and deportment are
completely natural and normal. We carefully monitor how each
member of the staff, from the host/hostess down to the bus
boy, interacts with guests and with each other, and how effectively
they perform their duties.
The next phase is in-depth interviews with
the owner and other key personnel. Once the owner has
given us his/her appraisal of the situation and clarified
his aims and goals, our team is better equipped to evaluate
which other staff members should be surveyed. These interviews
provide insight and evidence about the attitudes, perceptions
and expectations of each staff segment.
Ultimately, weve got to go from
the frying pan into the fire. In the kitchen, our team
scrutinizes the physical layout, logistics, tempo of activities,
role of each crew member, and the way the chef and his staff
interact with other personnel. Naturally, interviews with
the chef and other members of his staff are appropriate at
this point.
Our operational diagnostic can take anywhere
from one day to one week to perform, depending on the
complexity of the situation. Once all pertinent data has
been gathered, we compile it in a written report. This
report summarizes our observations and evaluations and
appraises the situation in question.
